SLOW COOKER RECIPES W/ THE ZEN OF SLOW COOKING SPICE BLENDS

1.  SMOKEY BEEF BRISKET

Prep Time: 5m, Cook Time: 8-10 hours LOW / 4 - 5 hours HIGH, Servings: 4-6

INGREDIENTS:

3 lbs beef brisket
1 Smoky BBQ Blend from The Zen of Slow Cooking
1/2 cup / 4 fl oz beef broth or 1/2 cup / 4 fl oz root beer

INSTRUCTIONS

Rub the brisket with the Smoky BBQ blend; transfer to the slow cooker or refrigerate overnight.

Add the broth or root beer to the brisket in the slow cooker.

Cover and cook on LOW: 8-10 hours or HIGH: 5 hours

Shred the brisket in the slow cooker using 2 forks

2.  DAUBE PROVENCALE

Prep Time: 20m Cook Time: 7-8 hours LOW / 3-4 HIGH Servings: 4-6

INGREDIENTS:

2 1/2 lbs beef chuck, cubed
2 tbsp flour
1 tsp salt
3 tbsp light olive oil
2 slices bacon, cut into 1″cubes
1 1/2 cups / 1 medium onion, diced
1/2 cup / 1 large carrot, diced
1/2 cup / 1 celery rib, diced
2 tsp / 4 cloves garlic, minced
2 tbsp tomato paste
1 Daube Provençale Blend from The Zen of Slow Cooking
2 cups / 16 fl oz red wine plus 1/2 cup / 4 fl oz water

INSTRUCTIONS:

Toss the beef in flour and salt to coat

Heat the oil in a skillet on medium; brown the beef

Transfer the beef to the slow cooker with the remaining flour

In the same skillet sauté bacon, onion, carrot, celery and garlic for 2 minutes; add to the slow cooker

Stir in tomato paste

Sprinkle in the Daube Provençale blend; add red wine and water

Stir, cover and cook on LOW: 7-8 hours or HIGH: 3-4 hours

3.  TACO CHILI

Prep Time: 15m, Cook Time: LOW for 6-8 hours / HIGH for 3-4 hours, Servings: 4-6

INGREDIENTS:

1 tbsp light olive oil
1 cup / 1 small onion, diced
1 cup / 1 small red bell pepper, diced
1lb ground beef
1 Southwest Fiesta blend from The Zen of Slow Cooking
1 x 14oz can kidney beans, drained
1 x 14oz can diced tomatoes
1 tbsp tomato paste
1 cup corn
2 tbsp flour
1/3 cup / 2 1/2 fl oz water
toppings - cilantro, sour cream, shredded cheese

INSTRUCTIONS:

heat the oil in a skillet on medium; sauté the onion and pepper
transfer onion mixture to slow cooker
add the ground beef to the skillet and brown for 1 minute
transfer the beef to the slow cooker
sprinkle Southwest Fiesta blend over the mixture in the slow cooker
add the kidney beans, tomatoes, tomato paste, corn, flour and water
stir, cover and cook on LOW: 6-8 hours or HIGH: 3-4 hours

4.  COQ AU VIN

Prep Time: 20m Cook Time: 7-8 hours LOW / 3-4 HIGH Servings: 4-6

INGREDIENTS:

2 lbs boneless, skinless chicken thighs
2 tbsp flour
1/2 tsp salt
2 tbsp olive oil
4 thick slices bacon, cut into 1″cubes
12 baby onions, peeled,
8oz pack mushrooms, sliced
2 tsp / 4 cloves garlic, minced
1 tbsp tomato paste
1 Coq au Vin Blend Slow Cooker Spice Blend from The Zen of Slow Cooking
1/4 cup / 2 fl oz cognac or brandy
1 3/4 cups / 14 fl oz red wine

INSTRUCTIONS:

Toss the chicken in flour and salt to coat

Heat the oil in a skillet on medium; brown the chicken for 3 minutes.

Transfer the chicken to the slow cooker with the remaining flour

In the same skillet sauté the bacon, onions, and mushrooms for 3 minutes; add the mixture to the slow cooker

Stir in the garlic and tomato paste

Sprinkle in the Coq Au Vin blend; add the cognac and wine

Stir, cover and cook on LOW: 7-8 hours or HIGH: 3-4 hours
