SMOOTHIE BOWLS

1.  BANANA CREAM PIE SMOOTHIE BOWL

Serves: 4 servings

INGREDIENTS:

SMOOTHIE BASE:

4 just ripe bananas, peeled
1 - 5.4 ounce can of unsweetened coconut cream (10 Tablespoons)
½ of a vanilla bean

TOPPINGS:

1 cup of granola
1 just ripe banana, peeled and thinly sliced
sprinkle with chia seeds or other favorite toppings

INSTRUCTIONS:

Place the ingredients for the smoothie base in a high powered blender. Blend until smooth starting on a low speed and working up to speeds 7-8 on a Vitamix. If you don't have a high powered blender, use 1 Tablespoon of vanilla extract instead of the vanilla bean.

Pour the smoothie base into 4 bowls, and top with granola, sliced banana, and your choice of seeds.

Serve immediately.

2.  PEACH PIE SMOOTHIE BOWL

Serves: 2

INGREDIENTS

1 1/2 cups frozen peaches
1/2 cup milk of choice
3/4 cup plain non-fat Greek yogurt
1 scoop unflavored or vanilla protein powder (optional)
1 tablespoon almond butter
1 tablespoon honey, use more if you like it sweeter
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
pinch of nutmeg
Fresh peach slices, granola, and toasted sliced almond for toppings

INSTRUCTIONS

In a blender add all of the ingredients except the toppings and blend until smooth.

Pour the smoothie into a bowl and top with fresh peach slices, granola, and toasted almond slices.

3.  AVOCADO KALE SMOOTHIE BOWL

Serves 1

INGREDIENTS:

1 cup kale leaves

1 cup almond milk

1 banana, sliced

½ avocado

½ cup ice

1 Tbsp. agave syrup, plus additional for serving

½ cup raspberries

1 kiwi, sliced

1 tsp chia seeds

INSTRUCTIONS:

Blend the kale, almond milk, ½ of the banana, avocado, ice, and 1 tablespoon of the agave until smooth.

Transfer to a bowl and top with the raspberries, kiwi, chia seeds, remaining ½ banana, and a drizzle of agave.

4.  ALMOND BUTTER AND RASPBERRY SMOOTHIE BOWL

Serves 1

INGREDIENTS:

1 large banana

1 ½ cups raspberries

½ cup soy milk

½ cup ice

2 Tbsp. almond butter

1 Tbsp. honey, plus additional for drizzling

5 strawberries, sliced

¼ cup granola

2 Tbsp. shredded coconut

INSTRUCTIONS:

Blend the banana, 1 cup of the raspberries, soy milk, ice, almond butter, and 1 tablespoon of the honey until smooth.

Transfer to a bowl and top with the strawberries, granola, coconut, remaining ½ cup raspberries, and a drizzle of honey.
