1. CILANTRO LIME CHICKEN WITH AVOCADO SALSA
Cilantro Lime Chicken:
1.5 lb. boneless chicken breast
¼ cup lime juice
2 tablespoons olive oil
¼ cup fresh cilantro
½ teaspoon ground cumin
¼ teaspoon salt
4 avocados, diced
½ cup fresh cilantro, diced
3 tablespoons lime juice
½ tablespoon red wine vinegar
½ teaspoon red pepper flakes
1 garlic clove, minced
salt to taste
To a small bowl, add ¼ cup of lime juice, olive oil, ¼ cup of fresh cilantro, ground cumin, and ¼ teaspoon of salt. Whisk until mixed.
Add chicken and marinade to a large ziplock bag. Let chicken marinade for 15 minutes.
Preheat grill to medium high heat (about 400 degrees). Place chicken on grill and grill each side for 4-6 minutes, until chicken is no longer pink. Remove and let sit.
To make the avocado salsa: add avocado, ½ cup fresh cilantro, 3 tablespoons lime juice, red wine vinegar, red pepper flakes, garlic clove, and salt to a small bowl. Gently toss to mix.
Top Cilantro Lime Chicken with fresh Avocado Salsa.
2. BAKED AVOCADO WITH EGG
2 avocados, pitted and some flesh scooped out
2 large organic eggs
salt and pepper to taste
herbs for garnish (basil, chives or parsley)
Preheat oven to 400°.
Slice avocados, pit them and scoop out a bit of flesh from around the sides.
Crack one egg into each avocado and top with salt and pepper.
Place on a cookie sheet with parchment paper.
Bake for 15 min. or until the egg is set and fully cooked.
Garnish with herbs and enjoy.
3. CAPRESE AVOCADO TOAST RECIPE
2 ripe avocados
2 teaspoons fresh lemon juice
Sea salt and black pepper, to taste
4 slices bread, toasted
4 ounces fresh mozzarella, sliced and cut into pieces, to fit the bread
1 cup grape tomatoes, halved
1/4 cup basil leaves, roughly chopped
Balsamic Glaze, for drizzling
1. Cut the avocados in half, remove pit, and scoop the flesh into a small bowl. Add the lemon juice, sea salt, and black pepper, to taste. With a fork, mash the ingredients together, keeping the texture slightly chunky.
2. Spread the mashed avocado evenly onto toasted bread slices. Top with fresh mozzarella slices, tomatoes, and basil. Season with additional salt and pepper, if desired. Drizzle with balsamic glaze and serve immediately.
4. BACON WRAPPED AVOCADOS
4-6 strips of bacon
1/3 cup brown sugar
1/2-1 teaspoon chili powder
heat the oven to 425
in a small bowl, mix together the brown sugar and chili powder. set aside
line a baking sheet with tin foil.
cut open the avocado and remove the pit. slice about 3/4" slices lengthwise through the avocado, and then cut through the middle to cut all of the slices in half so that you have thick chunks of avocado.
cut each slice of bacon in 3-5 pieces and wrap each piece around the avocado. roll in the brown sugar mixture and place on the baking sheet.
bake at 425 for 10-15 minutes. remove from the oven to a platter and stick a tooth pick in each for serving.
