MEMORIAL DAY RECIPES

1.  BACON WRAPPED JALAPENO HOT DOGS

INGREDIENTS:

2 Tbsp butter
2 onions, sliced into strips
6 hot dogs
2 jalapeños, seeded and sliced
6-12 slices of bacon
6 hot dog buns
Cheddar cheese, shredded
Guacamole

INSTRUCTIONS:

Line a baking sheet with aluminum foil and place a wire rack on top. Set aside. Preheat oven to 400 degrees.

Melt butter in a skillet over low heat, then add onions. Cook, stirring often, until onions are soft and browned, about 30 minutes.

To wrap the hot dogs: place a line of sliced jalapeños along one side of a wiener and carefully wrap with bacon. Use toothpicks to secure in place.

Place hot dogs on the wire rack and bake until bacon is cooked, 15-20 minutes. For crispier bacon, broil on high for the last 2-3 minutes.

Remove toothpicks and serve with caramelized onions, shredded cheese and guacamole.

2.  GRILLED CORN WITH CHIPOTLE-LIME BUTTER

INGREDIENTS

4 ears fresh corn, husked
2 tablespoons butter, softened
1/4 teaspoon freshly grated lime zest
1 teaspoon lime juice
1/2 teaspoon minced chipotle chile in adobo sauce plus 1/4 teaspoon of the adobo sauce, or 1/4 teaspoon ground chipotle pepper
1/2 teaspoon kosher salt

PREPARATION

Preheat grill to high. Wrap each ear in foil. Place on the grill and cook, turning frequently, for 10 minutes. 

Remove from the grill and let stand in the foil while preparing the butter. 

Combine butter, lime zest, lime juice, chipotle and adobo sauce (or ground chipotle) and salt in a small bowl. 

Carefully unwrap the corn. Serve with the butter.

3. WATERMELON FETA BLACKBERRY SKEWERS

INGREDIENTS:

1 small seedless ripe watermelon, cut into 1"cubes
6 ounces of Feta cheese, cut into 1” cubes
Fresh Ripe Firm Blackberries
Small wooden skewers

INSTRUCTIONS:

Skewer watermelon chunks, feta and blackberry.

Place on serving platter and store in refrigerator until ready to serve

4.  CHIPOTLE PEACH SALSA

INGREDIENTS:

4 peaches, diced
1 chipotle chili in adobo, chopped
1/4 cup red pepper, diced
1/4 cup red onion, diced
1/4 cup cilantro, chopped
1 lime, juice and zest
salt to taste

INSTRUCTIONS:

Mix everything together and enjoy!
